आपको यह जानकर आश्चर्य होगा कि हमारे देश मे 2000 से अधिक वनस्पतियों की पत्तियों से तैयार किए जाने वाले पत्तलों और उनसे होने वाले लाभों के विषय में पारम्परिक चिकित्सकीय ज्ञान उपलब्ध है, लेकिन मुश्किल से पांच प्रकार की वनस्पतियों का प्रयोग हम अपनी दिनचर्या मे करते हैं. आम तौर पर केले की पत्तियों में खाना परोसा जाता है. प्राचीन ग्रंथों मे केले की पत्तियों पर परोसे गए भोजन को स्वास्थ्य के लिए लाभदायक बताया गया है. आजकल महंगे होटलों और रिसोर्ट मे भी केले की पत्तियों का यह प्रयोग होने लगा है.
भारत में सदियों से विभिन्न वनस्पतियों के पत्तों से बने पत्तल संस्कृति का अनिवार्य हिस्सा रहे हैं. ये पत्तल अब भले विदेशों में लोकप्रिय हो रहा है भारत में तो कोई भी सांस्कृतिक, धार्मिक और सामाजिक उत्सव इनके बिना पूरा नहीं हो सकता था. इन समारोहों में आने वाले अतिथियों को इन पत्तलों पर ही भोजन परोसा जाता था. लेकिन अब ये पत्तलें खत्म होने लगी हैं.
बता दें कि सुपारी के पत्तों से बनाई गई प्लेट, कटोरी व ट्रे भी बाजार में उपलब्ध हैं, जिनमें भोजन करना स्वास्थ्य के लिए भी बहुत लाभदायक है. जिसे प्लास्टिक, थर्माकोल के विकल्प में उतरा गया है, क्योंकि थर्माकोल व प्लास्टिक के उपयोग से स्वास्थ्य को बहुत हानि भी पहुंच रही है. सुपारी के पत्तों का यह पत्तल केरला में बनाई जा रही हैं और कीमत भी ज्यादा नहीं है. तकरीबन 1.5, 2, रुपये साइज और क्वांटिटी के हिसाब से अलग अलग है.
कहा तो यह भी जाता है कि पलाश के पत्तल में भोजन करने से स्वर्ण के बर्तन में भोजन करने का पुण्य व आरोग्य मिलता है. केले के पत्तल में भोजन करने से चांदी के बर्तन में भोजन करने का पुण्य व आरोग्य मिलता है. रक्त की अशुद्धता के कारण होने वाली बीमारियों के लिए पलाश से तैयार पत्तल को उपयोगी माना जाता है. पाचन तंत्र संबधी रोगों के लिए भी इसका उपयोग होता है. आम तौर पर लाल फूलों वाले पलाश को हम जानते हैं, पर सफेद फूलों वाला पलाश भी उपलब्ध हैं. इस दुर्लभ पलाश से तैयार पत्तल को बवासिर (पाइल्स) के रोगियों के लिए उपयोगी माना जाता है.
पत्तल पर भोजन करने से मिलता है अद्भुत लाभ
जोड़ों के दर्द के लिए करंज की पत्तियों से तैयार पत्तल उपयोगी माना जाता है. पुरानी पत्तियों को नई पत्तियों की तुलना में अधिक उपयोगी माना जाता है. विशेषज्ञ कहते हैं कि लकवा (पैरालिसिस) होने पर अमलतास की पत्तियों से तैयार पत्तलों को उपयोगी माना जाता है.
पत्तलों से अन्य लाभ:
1. सबसे पहले तो उसे धोना नहीं पड़ेगा, इसको हम सीधा मिट्टी में दबा सकते हैं.
2. न पानी नष्ट होगा.
3. न केमिकल उपयोग करने पड़ेंगे.
4. न केमिकल द्वारा शरीर को आंतरिक हानि पहुंचेगी.
5. अधिक से अधिक वृक्ष उगाए जाएंगे, जिससे कि अधिक ऑक्सीजन भी मिलेगी.
6. प्रदूषण भी घटेगा.
7. सबसे महत्वपूर्ण झूठे पत्तलों को एक जगह गाड़ने पर, खाद का निर्माण किया जा सकता है एवं मिटटी की उपजाऊ क्षमता को भी बढ़ाया जा सकता है.
8. पत्तल बनाने वालों को भी रोजगार प्राप्त होगा.
9. आप नदियों को दूषित होने से बहुत बड़े स्तर पर बचा सकते हैं.
जैसे कि आप जानते ही हैं कि जो पानी आप बर्तन धोने में उपयोग कर रहे हो, वह केमिकल वाला पानी, पहले नाले में जाएगा, फिर आगे जाकर नदियों में ही छोड़ दिया जाएगा. जो जल प्रदूषण में आपको सहयोगी बनाता है. आजकल जो लोग अपने पर्यावरण और भावी पीढ़ी की चिंता कर रहे हैं, वे भंडारे , विवाह शादियों , बर्थडे पार्टियों में डिस्पोजल की जगह इन पत्तलों का प्रयोग कर रहे हैं.
बता दें कि भारत में पत्तल बनाने और इस पर भोजन करने की परंपरा कब शुरू हुई, इसका कोई प्रामाणिक इतिहास उपलब्ध नहीं है. लेकिन यह परंपरा सदियों से चली आ रही है. यह जान कर किसी को भी हैरत हो सकती है कि देश में किसी दौर में हजारों किस्म की वनस्पितयों की पत्तियों से पत्तल बनते थे. लेकिन आधुनिकता की बढ़ती होड़ ने इस उद्योग को समेट दिया है. अब खासकर शहरी इलाकों में पत्तल पर भोजन की परंपरा दम तोड़ती जा रही है. हमारे प्राचीन ग्रंथों में भी केले के पत्तल पर भोजन की परंपरा का जिक्र मिलता है. अब तो महंगे होटलों और रेस्तरां में भी प्लटों पर केले के पत्ते रख कर भोजन करने की परंपरा बढ़ रही है. यह जानना दिलचस्प होगा कि भारत में भले ही सदियों पुरानी यह परंपरा बदल रही हो, विदेशी इसे बड़े चाव से अपना रहे हैं. खासकर यूरोप के प्रमुख देश जर्मनी में तो पत्तलों पर भोजन की परंपरा काफी लोकप्रिय हो रही है. पर्यावरण को ध्यान में रखते हुए वहां इसकी लोकप्रियता तेजी से बढ़ रही है और अब उसकी देखादेखी दूसरे यूरोपीय देश भी पत्तलों की ओर आकर्षित हो रहे हैं.
