भारत पूरी दुनिया में एकमात्र ऐसा देश है जहां कॉफी की समूची खेती छाया वाले माहौल में की जाती है, इसे हाथ से चुना जाता है और फिर धूप में सुखाया जाता है. विश्व में कॉफी की कुछ सर्वोत्तम किस्में भारत में ही उगायी जाती हैं. इन्हें पश्चिमी एवं पूर्वी घाटों के जनजातीय किसानों द्वारा उगाया जाता है, जो विश्व में जैव विविधता वाले दो प्रमुख स्थल है. भारतीय कॉफी विश्व बाजार में अत्यंत ऊंची कीमतों पर बेची जाती है. यूरोप में तो इसकी बिक्री प्रीमियम कॉफी के रूप में होती है.
केन्द्रीय वाणिज्य एवं उद्योग मंत्रालय ने हाल ही में भारतीय कॉफी की पांच किस्मों को भौगोलिक संकेतक (जीआई) प्रदान किया है. इससे पहले भारत की एक अनोखी विशिष्ट कॉफी ‘मानसूनी मालाबार रोबस्टा कॉफी’ को जीआई प्रमाणन दिया गया था. भारत में 3.66 लाख कॉफी किसानों द्वारा तकरीबन 4.54 लाख हेक्टेयर क्षेत्र में कॉफी उगायी जाती है. इनमें से 98 प्रतिशत छोटे किसान हैं. कॉफी की खेती मुख्यत: भारत के दक्षिणी राज्यों में की जाती है. कॉफी गैर-परंपरागत क्षेत्रों जैसे कि आंध्र प्रदेश एवं ओडिशा (17.2 प्रतिशत) और पूर्वोत्तर राज्यों (1.8 प्रतिशत) में भी उगायी जाती है.
भारत में दुनिया की सबसे महंगी कॉफी का उत्पादन शुरू किया गया है. इसका नाम सिवेट काफी है. सिवेट को दुनिया की सबसे महंगी कॉफी की किस्म माना जाता है. अंतरराष्ट्रीय बाजार में इसकी कीमत 20 से 25 हजार रुपए किलो है. आपको बता दें कि भारत एशिया में कॉफी का तीसरा सबसे बड़ा उत्पादक और निर्यातक देश है. यदि आप भी इस कॉफी की चुस्की लेना चाहते हैं तो आपको बता दें कि इसका नाम सिवेट नाम की बिल्ली के नाम पर पड़ा है. सिवेट नाम की बिल्ली के मल से निकले बिना पचे कॉफी बीन से इसे तैयार किया जाता है. जब बागान में कॉफी पक रही होती है, उस दौरान सिवेट बिल्ली कॉफी की चेरी को खाती है. जिसका गूदा तो वह पचा लेती है, लेकिन गूदे के अंदर के बीज को वह पचा नहीं पाती और यही बीन मल परित्याग के समय साबुत निकल जाता है. यह काम कर्नाटक के कुर्ग जिले में बहुत छोटे पैमाने पर शुरु हुआ है. सिवेट कॉफी को लुवर्क कॉफी भी बोला जाता है.
बता दें कि भारत के लिये 2018 में इटली शीर्ष निर्यात बाजार रहा. भारत ने इटली को 76,437.56 टन, जर्मनी को 28,582 टन और रूस को 21,397 टन कॉफी का निर्यात किया है. कॉफी बोर्ड के ताजा आंकड़ों के मुताबिक, देश से 2018 में 3,50,280 टन कॉफी का निर्यात किया गया, जो कि 2017 में 3,78,119 टन की तुलना में कम है. इस दौरान, रोबस्टा कॉफी का निर्यात 17.65 प्रतिशत गिरकर 1,79,903 टन पर आ गया. 2017 में यह आंकड़ा 2,18,463 टन पर था. इंस्टेंट कॉफी का निर्यात 39.87 प्रतिशत गिरकर 29,157 टन पर आ गया जबकि 2017 में 48,496 टन कॉफी का निर्यात किया गया था.
दुनिया में कॉफी का सातवां बड़ा निर्यातक देश होने के बाद भी भारत इंटरनेशनल कॉफी ऑर्गेनाइजेशन द्वारा जारी सर्वे में चोटी के बीस देशों में शामिल नहीं है. आईसीओ द्वारा जारी सर्वे में यूरोपीय देश फिनलैंड पहले नंबर पर है. यहां हर साल औसत 12 किलो कॉफी की खपत है. वहीं इस सूची में नॉर्वे, आइसलैंड और डेनमार्क दूसरे, तीसरे और चौथे पायदान पर हैं. भारत दुनिया में कॉफी का सातवां सबसे बड़ा निर्यातक देश है. दक्षिण भारतीय राज्यों में इसका सबसे ज्यादा उत्पादन होता है. भारत हर साल अलग-अगल देशों को 767 मिलियन पाउंड कॉफी का निर्यात करता है, जोकि दुनिया के कॉफी उत्पादन का चार फीसद है. मगर इतना उत्पादन होने के बाद भी देश कॉफी की खपत के मामले में काफी पीछे है. यहां लोगों की गर्म चाय की प्याली ही पसंद है. क्रोएशिया जैसा देश जो इस सूची में 19वें पायदान पर है, वहां प्रति व्यक्ति 4.9 किलो कॉफी की खपत है.
