चटनी बनाने की शुरुआत भारत ने ही की थी. जब हम भारत भ्रमण को निकलते है तो हर राज्य, हर शहर के प्रसिद्ध खाने की चीजों को जरुर चखते हैं. हर खाने में कुछ न कुछ नया स्वाद होता है. नए खाने के साथ-साथ हमें अलग तरह की चटनियां भी खाने को मिलती है.
जब हम दक्षिण भारत में जाते हैं, तो हर तरफ नारियल दिखते हैं. वहां के लोग नारियल का उपयोग हर तरह के खाने में करते है. इडली, डोसा, वडा इन सबके साथ नारियल की चटनी का मज़ा ही कुछ और है. इसे बनाने के भी कई तरीके हैं. कोई टमाटर के साथ बनाता है, तो कोई प्याज के साथ. जब हम महाराष्ट्र और राजस्थान में जाते हैं, तो वहां लहसुन की चटनी बहुत प्रसिद्ध है. लहसुन के साथ प्याज, हरी मिर्च, मिलाकर बनाई गई चटनी, खाने का स्वाद बढ़ा देती है.
जब हम उत्तरी और पूर्वी भारत की तरफ बढ़ते हैं तो धनिया, पुदीना, प्याज़, आम, मिर्च की चटनियाँ हमें खाने को मिलती हैं. इन सारी चटनियों की एक बात आम है कि ये सब पेट के लिए बहुत ज्यादा फायदेमंद होती हैं.
आइए आपको मिलवाते है अजीबो गरीब चटनियों से;
- ‘नघे थू’उम’- ये चटनी नागालैंड में मिलती है. ये चटनी सुखी मछली, मिर्च, और टमाटर से बनी होती है.
- ‘अखुनी चटनी’- ये भी नागालैंड की अनोखी चटनियों में से एक है. ये सुखाई गई सोयाबीन, मिर्च, लहसुन और नमक से बनती है. इस चटनी की सबसे खास बात ये है की ये दुनिया के सबसे तीखे मिर्च ‘भूत झोलाकिया’ से बनी होती है.
- ‘अमसूतो खेहुरेर चटनी’- ये चटनी वेस्ट बंगाल में मिलती है. खजूर और आम पापड़ मिलाकर बनाई जाती है येचटनी.
- ‘गोंगुरा चटनी’- आंध्र प्रदेश में मिलने वाली ये चटनी लाल सोरेल के पत्तों, लहसुन और मिर्च मिलाकर बनाई जाती है.
- ‘मूली की चटनी’- ये आपको ज्यादातर भारत के कश्मीर में मिलेगी.
- ‘क्सुकन माछोर’- ये चटनी असम में मिलती है. सुखी मछली, टमाटर, आलू, उर प्याज को मिलाकर इस चटनी को बनाया जाता है.
- ‘म्य्सुर चटनी’- दक्षिणी भारत में पाई जानेवाली ये चटनी दाल, इमली और मसालों से बनती है.
- ‘फाफ्दा चटनी’- ये चटनी आपको गुजरात में मिलेगी. इसकी खासियत ये है की ये बेसन से बनती है.
- ‘ओल की चटनी’– ओल को सुरन भी कहा जाता है. ये ज्यादातर बिहार और उत्तर प्रदेश में मिलने वाली चटनी है.
जब बात आती है शरीर की बात तो बहुत सारी ऐसी चटनियाँ हैं, जो सेहत को सही रखती हैं. ऐसी कई चटनियाँ हैं, जो बड़ी बड़ी बिमारियों से बचाती हैं. वो हैं;
- इमली की चटनी- ये चटनी एन्टी-ओक्सिडेंट और एन्टी-इंफ्लेमेटरी है. मधुमेह, कैंसर, और दिल के बिमारियों से बचाती है. एन्टी-हिस्टामिक होने के कारण ये अस्थमा से भी बचाओ करती है.
- मूंगफली की चटनी- कुपोषित बच्चों के लिए फायदेमंद होती है. कार्बोहायड्रेट, प्रोटीन और फैट से भरपूर होती है.
- मूली की चटनी- पाचन समस्याओं में मददगार होती है. रक्तसंचार में मदद करती है और आपके शरीर को प्राकृतिक रूप से हाइड्रेटेड रक्ति है.
- आंवला चटनी– इम्यून सिस्टम को सही रखने में मदद करती है. मधुमेह के रोगियों के लिए लाभदायक है.
