कोई भी त्योहार हो, घर में मेहमानों का आना हो या किसी के घर मिठाई लेकर जाना हो, तो गुजिया एक बेहतर विकल्प है। वैसे, होली पर अक्सर सभी घरों में कई तरह की मिठाइयां बनाई जाती हैं, लेकिन उनमें सबसे ज्यादा डिमांड रहती है गुजिया की। क्योंकि गुजिया होली की स्पेशल मिठाई है। वैसे तो बाजार में रवा गुजिया, मावा गुजिया, ड्राईफ्रूट्स गुजिया आसानी से मिल जाती हैं, लेकिन जो स्वाद घर पर बनी गुजिया की बात ही अलग होती है।
गुजिया मैदा का मिश्रण तैयार कर खोआ भरकर बनाई जाती है। हर घर में ये मिठाई बनाई जा रही है। लेकिन गुजिया बनाने के लिए इस्तेमाल की जाने वाली सामग्री के महंगे होने से इसका स्वाद कसैला हो गया है। दुकानदार राहुल अग्रवाल ने बताया कि बाजार में मेवा का भाव होली का त्योहार होने के चलते आसमान छू रहा है। गुजिया में इस्तेमाल होने वाली सामग्री में चीनी या बूरा, किसमिश, खोआ, गिरी, चिरौंजी, इलायची आदि का इस्तेमाल किया जाता है। इस बार गिरी का भाव यकायक बढ़ गया। वहीं चिरौंजी के दाम भी आसमान छू रहे हैं। बाजार में छोटी इलायची के रेट भी बढ़े हैं। बढ़ी कीमतों का असर इस व्यंजन पर पड़ रहा है। लोेग बहुत कम सामान के साथ इस मिठाई को बना रहे हैं।
गुजिया को शुद्ध भोग के रूप में जाना जाता है। मैदा को गूंदने के बाद उसकी लोई बनाकर एक सांचे में ढाल दिया जाता है और उसमें खोआ का तैयार मिश्रण बनाया जाता है। इसके बाद गुजिया को एक पवित्र स्थान पर ढंककर रखा जाता है। गुजिया बनाने के दौरान श्रीकृष्ण के भजन गाए जाते हैं या फिर मौन रहकर इसे बनाया जाता है। होली मिलन में आने वाले लोगों को इसे भेंट किया जाता है।
