पूरन पूरी हो या दाल बाटी, तंदूरी रोटी हो या शाही पुलाव, पंजाबी खाना हो या मारवाड़ी खाना, भारतीय भोजन की अपनी एक विशिष्टता है और इसी कारण से आज संसार के सभी बड़े देशों में भारतीय भोजनालय पाये जाते हैं जो कि अत्यंत लोकप्रिय हैं।
भारतीय संस्कृति में भोजन पकाने को पाक कला कहा गया है अर्थात् भोजन बनाना एक कला है। भारतीय भोजन की सबसे बड़ी विशेषता तो यह है कि आपको कई प्रकार के भोजन न भी मिलें तो भी आपको आम का अचार या नीबू का अचार या फिर टमाटर की चटनी से भी भरपूर स्वाद प्राप्त होता है। भारतीय भोजन तो विभिन्न प्रकार की पाक कलाओं का संगम ही है। इसमें पंजाबी भोजन, मारवाड़ी भोजन, दक्षिण भारतीय भोजन, शाकाहारी भोजन (निरामिष), मांसाहारी (सामिष) भोजन आदि सभी सम्मिलित हैं।
