जलेबी जितनी रस में घुली होती है उतनी ही बचपन की हर यादों में। खास कर 15 अगस्त और 26 जनवरी को तो जरूर । सुबह सवेरे उठकर सफेद पोशाक पहनकर स्कूल को भागना ,झंडे को फहराना और आते-आते देश की राष्ट्रीय मिठाई जलेबी के रस का रसास्वादन किसे भला याद ना हो। जलेबी खाओ और उसके रस की बूंदें कपड़ो पर अपनी छाप ना छोड़े। ऐसा नहीं ही हुआ होगा कि किसी के साथ एक ना एक बार ये ना हुआ हो।
गांव के मेलों में दुकानों के छज्जे से लटकती सूखी जलेबी बरबस ही हमें बताती थी कि देखों मिठी मिठी रस में डूबे हमारे साथी तुम्हारा इंतजार कर रहे हैं। आओ और बड़े चाव से खाओ। हलवाई की हाथें,तेलों में तैरती गोल गोल आड़ी तिरछी सी बनावट को करहाई से निकलते ही झट से चीनी के मिठे घोल में धक से डूबोना और हमारा उसे पाने के लिए चिल्ला उठना ।भैया जरा हमें भी देना जलेबी।वाह कितने मजेदार रहते हैं ये पल ना।

कहते हैं जलेबी मूलरूप से एरियाना, अफगानिस्तान से आई है। हौब्स-जौब्सन की माने तो जलेबी मूल रूप से जलाबिया जो कि एक अरेबिक शब्द है या फारसी के शब्द जलिबिया से आया है। 10 वीं शताब्दी के इब्र सय्यर अल-वरकाक की अरबी पाक कला की किताब अल तबिख में जलाबिया के बारे में बताया गया है। इस पुस्तक का अंग्रेजी अनुवाद द बुक ऑफ डिशेज है। मुहम्मद बिन हसन अल-बगदादी की किताबों में भी इस तरह के पकवान के बारे में लिखा है।

रस घोलती जलेबी को भारत के साथ कई और देशों में बड़े चाव के साथ खाए जाने के कारण अलग अलग नामों से बुलाया जाता है। ईरान में इसे जुलुबिया कहते हैं।ट्यूनीशिया में इसे ज’लाबिया तो अरब में जलाबिया । क्या आपको पता है कि कभी भारत के विस्तार का हिस्सा रहे अफगानिस्तान में मीठी रस भरी जलेबी को मछली के साथ परोसा जाता है।लेबनान में तो जलेबी से ही मिलता जुलता नाम एक पेस्ट्री का है जिसे जेलाबिया कहा जाता है।श्री लंका की पानी वलालु मिठाई भी लगभग जलेबी से ही मिलती जुलती है। नेपाल में जेरी जलेबी का ही एक रूप है।मॉरीशस और कोमोरोस में गाटो माउटेल नाम का पकवान भी जलेबी का ही रूप है।

लाल –नारंगी रंग सी रसभरी टेढ़ी मेढ़ी गोल स्वाद में मिठी,चाशनी में डूबी गर्म जलेबियां भारत के किस कोनो में नहीं पसंद की जाती हैं। हर उम्र के लोग इसे बहुत ही चाव से खाते हैं। कुछ इसे यूँ ही खा जाते हैं तो कुछ गर्म जलेबी को ठंडी ठंडी रबड़ी में और कुछ तो दही में ही टपाक।जी हां ना जाने और कितने तरीकों से यह रसभरी लोगों की जुबानों में मिठास घोलती है।
उत्तर भारत में जलेबी को मूल रूप से मैदे के आटे और उड़द की दाल से बनाए जाते हैं। साइज में छोटें और करारे । लेकन क्या आपको पता है कि इंदौर शहर में अपनी इस रसभरी को छोटे छोटे ना बनाकर लगभग 300 ग्राम की एक मतलब इतनी बड़ी की एक साथ खाने की सोच भी नहीं सकते ।इंदौर में जलेबी के घोल में पनीर डालकर पनीर जलेबी का भी बड़ा चलन है और ये वहां बड़े चाव से खाई जाती है।बंगाल की तो पूछिए ही मत वहां तो इसे जिलपी कहते हैं।यहां दूध और मावा को मिलाकर जलेबी के मिश्रण में डालकर मावा जलेबी बना लेते हैं। मावा जलेबी भी ऐसी की मुंहमें जाते ही घुल जाए।
