Turmeric : हल्दी भारतीय वनस्पति में एक अहम स्थान रखता हैं।बचपन से लेकर मृत्यु तक इसका उपयोग तो हम निजी अथवा सामाजिक मान्यताओं के आधार पर करते ही है। हल्दी को आयुर्वेद में प्राचीन काल से ही एक चमत्कारिक औषधि के रूप में बताया गया है।हमारे औषधीय ग्रंथों में इसेहरिद्रा,कुरकुमा लौंगा,वरवर्णिनी,गौरी,क्रिमिघ्ना योशितप्रीया,हट्टविलासनी,हरदल,कुमकुम,नाम दिया गया है।
हल्दी को एक महत्वपूर्ण औषधि के रूप में आयुर्वेद में बताया गया है लेकिन आप और हम भारतीय रसोई में इसके महत्वपूर्ण स्थान को नहीं भूल सकते। आज सम्पूर्ण भारत में शायद ही कोई घर हो जहां हल्दी का प्रयोग किचन में ना होता हो। और किचन में ही क्यूँ हल्दी तो भारतीय धार्मिक परंपराओं में भी काफी शुभ माना जाता रहा है। आज तो शादियों में हल्दी सेरेमनी की परंपरा ने तो काफी जोर पकड़ रखा है। शायद इसलिए कि यह सिर्फ परंपरा निभाने की बात नहीं बल्कि ट्रेंड के साथ हल्दी के फायदे को अपनाने से है। विवाह के रस्मों में वर और वधु दोनों के शरीर पर हल्दी के लेप की प्रथा ना जाने कितनी पुरानी है।
हल्दी सिर्फ मसाले या रीति रिवाजों में इस्तेमाल होने की चीज नहीं है बल्कि ये एक ऐन्टीसेप्टिक के रूप में भी कार्य करती है। बचपन में जब कभी भी हमें चोट लग जाया करती थी तो माँ या घर के बड़े सदस्य चोट को साफ कर सबसे पहेल उस पर कुछ लगाते थे तो वह थी हल्दी। और हमारी चोट देखते-देखते हंसते खेलते भर भी जाता था। सर्दियों में जब सर्दी-जुकाम से हम परेशान होने लगते हैं तो आज भी घर के बड़े हमें हल्दी-दूध पीने की सलाह देते हैं।
आधुनिक रिसर्चर की माने तो हल्दी में एंटीऑक्सीडेंट, एंटीइंफ्लेमेटरी,केलोरेटिक,एंटमाइक्रोबियल,एंटीसेप्टिक,एंटी कैंसर, एंटीट्यूमर,हेपटोप्रोटेक्टिव( लिवर को सुरक्षित रखने वाला गुण), कार्डियोप्रोटेक्टिव(हृदय को सुरक्षित रखने वाल गुण) और नेफ्रोप्रोटेक्टिव(किडन को नकसान से बचाने वाला) गुण मिलते हैं। इसमें उड़नशील तेल 5.8 फीसद,प्रोटीन 6.3 फीसद, कार्बोहाईड्रेट 68.4 फीसद के साथ साथ कुर्कमिन(cucurmin) नामक पीत रंजक द्रव्य मिलता है। इसी कुर्कमिन के कारण हल्दी का रंग पीला होता है।
भारतीय रसोई की शान और चमत्कारिक औषधीय गुणों के साथ साथ हल्दी का बहुत ज्यादा उपयोग सौन्दर्यवर्धन में भी होता है। हल्दी के उबटन की परंपरा तो जन्म के बाद से लेकर मृत्यु के बाद तक की है। क्या आपको पता है कच्ची हल्दी की सब्जी बनाने की परंपरा भारत के किस राज्य में है। तो हम आपको बताते हैं कि कच्ची हल्दी की सब्जी राजस्थान में परंपरागत तौर पर बनाई जाती है। जिसे शादी या अन्य मांगलिक अवसरों पर बनाई जाती है। इसकी रेसिपि की राज बताऊं तो इसे देशी घी में तलकर बनाते हैं ताकि उसका कड़वा स्वाद खाने में ना आये और यह ज्यादा पौष्टिक हो।
हल्दी अदरक की प्रजाति का 5-6 फुट तक बढ़ने वाला पौधा है जिसके जड़ की गाठों में हमें हल्दी मिलती है। हल्दी को आयुर्वेद में प्राचीन काल से ही एक चमत्कारिक द्रव्य के रूप में मान्याता प्राप्त है। इसका उपयोग भारत के वैदिक संस्कृति में लगभग 4000 साल पुराना है। यह संभवत: 700 ई. में चीन, 800 ई. में पूर्वी अफ्रीका तथा 1200 ई. तक पश्चिम अफ्रीका होते हुए 18वीं शताब्दी तक जमैका पहुँच गया। नई दिल्ली के पास खोजे गए अवशेषों में हल्दी के भी अवशेष मिलें है जो कि लगभग 2500 ईसा पूर्व के बताए जाते हैं। लगभग 500 ईसा पूर्व से हल्दी का आयुर्वेद में इसके प्रयोग की व्याख्या है। काफी मजेदार और रोचक बात है कि हल्दी को गुणों की समानता के कारण अदरक का देशी चचेरा भाई कहा जाता है। कई जगह तो इसे भारतीय केसर भी कह कर पुकारा जाता है। दुनिया में लाकाडोंग हल्दी को दुनिया की सबसे अच्छी हल्दी के रूप में जाना जाता है। यह भारत में सर्वश्रेष्ठ हल्दी के घर मेघालय के पहाड़ी इलाकों में जैविक रूप से उगाई जाती है।
