घुमावदार सड़कें, नदियों में गोते लगाते बच्चे और रहस्य से भरे घने जंगल। कम कहे तो ज़्यादा समझिए और जान जाइए कि मैं हिमाचल की बात कर रहा हूँ। हिमाचल के लोग शाकाहारी खाना खाने के मामले में एक अलग ही लीक पर चलते हैं। सात्विक खाना और उसमें हिमाचल की लज़्ज़त के क्या कहने।
हर राज्य के व्यंजन मुख्य रूप से उस राज्य के जलवायु और स्थलाकृति पर आधारित होते हैं। रोजाना तो हमारे भोजन में सामान्य दाल-चावल, सब्जी-रोटी ही होता है। लेकिन त्यौहार के अवसरों के दौरान विशेष व्यंजन पकाये जाने की परंपरा तो सदियों पुरानी है। हिमाचल में उत्सव के मौके पर भोजन में, पारंपरिक भोजन, धाम (पारंपरिक अवसरों में दोपहर का भोजन) बनता है। पारंपरिक धाम बहुत उत्साह से बनाई जाती है।
कोई और नहीं बना सकता धाम…
धाम हिमाचल प्रदेश में परोसे जाने वाला एक पारंपरिक थाली है। हिमाचली धाम को किसी विशेष अवसर या त्यौहारों में बनाया जाता है। आप इसे हिमाचल प्रदेश की, सांस्कृतिक विरासत का महत्वपूर्ण हिस्से, के रूप में भी देख सकते हैं। क्या आपको मालूम है कि धाम केवल ‘बोटियों’ द्वारा पकाई जाती है। ‘’बोटीया’’ ब्राह्मणों की एक विशेष जाति है जो वंशानुगत रसोईए होते हैं। इस विस्तृत भोजन की तैयारी रात से पहले ही शुरू हो जाती है। खाना पकाने के लिए इस्तेमाल किए जाने वाले बर्तन आम तौर पर पीतल वाले होते हैं। जिन्हें ‘’चरोटी’’ या ‘’बलटोई’’ कहा जाता है। इसे ज़मीन पर बिठाकर सामूहिक तौर पर परोसने की परंपरा है। इस स्पेशल थाली को राज्य के संस्कृति और रीति-रिवाज को ध्यान में रखकर बनाए गए दिशा निर्देशों से ही बनाया जाता है।
क्या-क्या शामिल है धाम में….
हिमाचल प्रदेश में परोसी जाने वाली इस खास थाली जिसमें कई तरह के पहाड़ी और पारंपरिक व्यंजनों को परोसा जाता है में आमतौर पर दाल, चावल, राजमा, मद्रा, सेपी बड़ी, कढ़ी और दूसरे व्यंजन शामिल होते हैं। धाम को पूर्ण रूप से पारंपरिक तौर परं साल के बड़े पत्तों में परोसा जाता है। भोजन पतलू नामक पत्तों की प्लेटों पर दिया जाता है। दाल, चावल और सब्जी के अलावा इसमें काले चने का खट्टा, बूर की कढ़ी और गुड़ जैसे दूसरी चीजों को शामिल किया जाता है। कभी-कभी हिमाचली धाम के स्पेशल थाली में शाकाहारी व्यंजन के अलावा मांसाहारी व्यंजनों को भी शामिल किया जाता है। लेकिन इसकी परंपरा के अनुसार यह एक शाकाहारी थाली है, जिसे बिना लहसुन और प्याज के बनाया जाता है। इसके अलावा इस हिमाचली धाम में केवल दाल और डेयरी प्रोडक्ट का इस्तेमाल कर भी बनाया जाता है, इसमें किसी तरह के सब्जी का उपयोग नहीं किया जाता है।
सभी राज्यों की अपनी ही अलग खान-पान और लोकप्रिय व्यंजन होते हैं। वैसे ही हिमाचली धाम हिमाचल प्रदेश की अनूठी संस्कृति और खानपान का प्रतिनिधित्व करता है। इस थाली में परोसे जाने वाले व्यंजनों को विशेष तरह से तैयार किया जाता है। पारंपरिक मसालों और स्थानीय सामग्रियों का उपयोग कर इसे पकाया जाता है। यह पारंपरिक भोजन सिर्फ स्वाद में ही नहीं बल्कि सेहद के दृष्टिकोण से भी बड़े पौष्टिक होते हैं, जिसके सेवन से खाने वाले व्यक्ति को संतुष्टि और तृप्ति मिलती है।
धाम के पीछे का इतिहास….
स्थानीय लोगों के अनुसार धाम को पहले मंदिरों में भगवान को प्रसाद चढ़ाने के लिए बनाया जाता था। इस हिमाचली धाम को चंबा के राजा जयस्तंभ के द्वारा शुरू किया गया था। चंबा के राजा एक बार कश्मीर भ्रमण के लिए गए थे और वहां उन्होंने उनके पारंपरिक थाली का स्वाद लिया। जिसके बाद में चंबा आकर ऐसी ही थाली बनाने के लिए कहा साथ ही उन्होंने यह भी कहा कि इसे शुद्ध शाकाहारी तरह से बनाया जाए, इसलिए इसे ब्राह्मणों के द्वारा बनाया जाता है। उस समय चंबा अपने मसाले, राजमा और दूध के लिए प्रसिद्ध था जिसके कारण उन्हीं सामग्रियों का उपयोग कर इसे बनाय गया।
हालांकि अब इसे शादी, समारोह और त्योहारों जैसे दूसरे अवसरों के लिए भी बनाया जाने लगा है। धाम शादी, जन्मदिन अथवा सेवानिवृत्ति पार्टी या किसी भी धार्मिक अवसरों पर कांगड़ी संस्कृति के लोगों के लिए दोपहर का भोजन है। धाम में सबसे पहले पके हुए चावल और मधरा जो सफ़ेद चने, राजमाह, या पनीर को परोसा जाता है। उसके बाद फिर से चावल परोसे जाते है , और फिर कड़ी ,माह (तेली माह ) की दाल, खट्टा और अंत में मीठा भात (मीठे चावल) को परोसने की परंपरा है|
