सावन का सबसे खास व्यंजन है घेवर. अधिकतर लोग सावन में इसे खाना पसंद करते हैं. बरसात के मौसम में कई तरह के व्यंजन बनते हैं लेकिन घेवर की बात की कुछ अलग है. यह मैदे से बना, मधुमक्खी के छत्ते की तरह दिखाई देने वाला एक खास्ता और मीठा पकवान है. वैश्वीकरण के दौर में आज घेवर का रूप भी बदलने लगा है, 450 से लेकर 1000 रूपये प्रति किलो का घेवर बाजार में उपलब्ध है, जो जैसा दाम लगाता है उसे उसी प्रकार का माल मिल जाता है.
सादा घेवर सस्ता है जबकि पिस्ता, बादाम और मावे वाला घेवर मँहगा. पिस्ता बादाम और मावे वाला घेवर ज्यादा प्रचलित हैं, हालाँकि लोगों का कहना है कि जितना आनंद सादा घेवर के सेवन में आता है उतना मेवा-घेवर में कतई नहीं। फिर भी लोग मावा-घेवर को ही खरीदना पसंद करते हैं.
सावन के महीने में घेवर की खुशबू पूरे बाजार को महका देती है और तीज व रक्षाबंधन के अवसर पर घेवर की दुकानों पर भीड़ देखते ही बनती है. घेवर दो तरह को होता है, फीका और मीठा. ताज़ा घेवर नर्म और ख़स्ता होता है पर यह रखा रखा थोड़ा सख़्त होने लगता है. इस समय फीके घेवर को बेसन में लपेटकर, तलकर मज़ेदार पकौड़े बनाए जाते हैं. मीठे घेवर की पुडिंग बढ़िया बनती है.
सावन में तीज के अवसर पर बहन-बेटियों को सिंदारा देने की परंपरा काफी पुरानी है, इसमें चाहे कितना ही अन्य मिष्ठान रख दिया जाए लेकिन घेवर होना अवश्यक होता है. इसलिए साल के विशेष समय पर बनने वाली इस पारंपरिक मिठाई घेवर का वर्चस्व टूटना संभव नहीं है, भले ही आधुनिक मिठाइयों के सामने इसकी लोकप्रियता में कुछ कमी दिखाई देती हो.
घेवर वैसे तो राजस्थानी मिठाई होती है पर इसे पंसद देश भर में किया जाता है. घी-मैदा और शक्कर से बनने वाली इस मिठाई को इंग्लिश में हनीकॉम्ब डेजर्ट कहा जाता है. ड्राई फ्रूट- रबड़ी आदि से भरपूर घेवर बाजार में सामान्य मिठाई की तुलना में मंहगा होता है. घेवर तीन प्रकार से बनाया जाता है. सादा घेवर, मावा घेवर और पनीर घेवर. ग्राहक सादा घेवर खरीदना ज्यादा पसंद करते हैं. मावा घेवर बेचते समय विके्रता ग्राहक को सावधान करते हैं कि इसका सेवन 24 घंटे के अंदर हो जाना चाहिए. चूंकि घेवर पर लगाया जाने वाला मावा कच्चा होता है और इसकी मियाद एक दिन से ज्यादा नहीं होती. फ्रीज से बाहर निकलने के कुछ घंटे बाद मावा खराब होने का खतरा रहता है|
