नईदिल्ली।घर में जायके का एक नाम अचार। कभी दादी तो कभी नानी जब भी हम वहां जाते थे तो वहां एक सौंधी सी खुशबू चीनी मिट्टी के मर्तबान से आती रहती थी। छुप छुप कर बार बार वहां जाना और छुप छुपाकर उसमें से निकाल कर वहां से रफू चक्कर हो जाना फिर धिरे धिरे उसका आनंद लेना किसे याद नहीं होगा। स्वाद भी ऐसा कि मुंह में घुलते ही चटखारे सी आ जाए। घर के बड़े को डाटने के बाद भी इन हरकतों को दुहराना अपनी जिंदगी की कुछ खास लम्हें जिन्हें हर कोई याद तो जरूर करता होगा। जी हां हम बात कर रहे हैं जायको में ऐसा जिसके बिना खाना अधूरा सा लगता है। अचार।
भारतीय भोजन की थाली में सब कुछ हो पर अचार ना हो तो थाली कुछ अधूरी सी लगती है। कई पकवानों से सजी थालियां पर अचार के कुछ हिस्से सारी थाली के जायके को कुछ इस कदर कर देती है जैसे नीले आसमान मे पुनम की चांद तारों के बीच अपनी अहमियत रखता है। सिर्फ भारत ही नहीं पूरी दुनिया में जायकों की रानी अचार की अपनी एक खास जगह रही है।तभी तो अमेरिका हो या इंग्लैण्ड या फिर अफ्रिका हो या भारत कोई भी इसके जायके से अछूता नहीं रहा है।
भारत में सैकड़ो सालों से अचार भोजन की थाली का एक अहम हिस्सा रहा है।भारत के विभिन्न हिस्सों में अचार को अलग अलग नामों से जाना जाता रहा है।गुजराती में इसे अथुन,मराठी में लोचा, मलयालम में उप्पिलिटुथ,कन्नड़ में उप्पिनकायी,तेलगु में पचड़ी और तमिल में उरूकाई कहा जाता है।
वैसे तो सदियों से अचार एक संरक्षित भोजन की कड़ी का हिस्सा रहा है। लम्बे समय तक किसी भी खाने की चीज को सहेज कर रखना और मौसम के ना रहते इसके जायके का मजा लेना अचार का ही विचार है।अचार के इतिहास को खंगलाने लगे तो इसके शब्द की उत्पत्ति फ़ारस से हुई है। जिसमें सिरका फल नमक शहद को संरक्षित रूप में परिभाषित किया गया है।

भारतीय अचार मसालों, नमक और तेल के मिश्रण के साथ फलों या सब्जियों को किण्वित करके बनाया जाता है और अपने अद्वितीय स्वाद और बनावट के लिए जाना जाता है।भारत के हर हिस्से की अपनी एक अनूठी शैली और स्वाद है। उत्तर में, अचार आमतौर पर सरसों के तेल और सौंफ, जीरा और सरसों के बीज जैसे मसालों के मिश्रण से बनाया जाता है। दक्षिण में, अचार इमली या नींबू के रस की मदद से बनाया जाता है जसमें करी पत्ते, सरसों के बीज और मिर्च पाउडर से जायके में चार-चांद लग जाते हैं।भारत के पूर्वी हिस्से में, अचार आम या नींबू से बनाया जाता है जिसमें सरसों के तेल, हल्दी और लाल मिर्च जान डाल देती है तो वहीं पश्चिम में, अचार आमतौर पर जीरा, धनिया और हल्दी जैसे मसालों के मिश्रण से बनाया जाता है।
