SAMOSA: समोसा, एक ऐसी डिश है, जिसका नाम सुनते ही मुंह में पानी आने लगता है। भारत के अधिकतर जगहों पर आपको गरमा गरम समोसे तलते हुए मिल जाएंगे। जिसे मन ना हो वो भी एक बार इसे देख कर ललायित हो जाए। भारत में चाय और समोसे का कॉम्बिनेसन बहुत ही प्रचलन में है। समोसे का जायका और बढ़ जाए जब इसका साथ निभाने छोले, सब्जी या चटनी आ जाए। भारत की जुबान पर इसका स्वाद ऐसे चढ़ा है जैसे यह भारत की पहचान बन गया हो। लेकिन क्या आपको पता है समोसा ने भारत तक पहुंचने में काफी लंबा सफर तय किया है। ज
जी हां, भारत की तमाम खाने-पीने की दुकानों में बिकने वाले समोसे की क्या है कहानी। कहते हैं भारत में हर रोज लगभग 5-6 करोड़ समोसे खाए जाते हैं। आज के समय में एक समोसे की कीमत है कम से कम 10 रूपये तो आप ही अंदाजा लगाए एक दिन में इसका कारोबार कितने का होता होगा। चलिए समोसे के दाम से इतर इसके सफर की बात कर लें। वैसे तो समोसे का इतिहास काफी पुराना है। यह कई मील का सफर तय कर भारत पहुंचा है। कुछ लोगों का कहना है कि समोसे ने अपने सफर की शुरूआत ईरान से की थी। समोसे का स्वरूप तिकोना कब और कैसे हुआ, इसकी तय जानकारी तो शायद ही किसी के पास हो लेकिन हां ईरान के शहरों में ठीक इसी प्रकार की एक डिश मिलती थी। फारसी में इस डिश को “संबुश्क” कहते थे। इसका अपभ्रंश सम्बुसा या सामुसा भी प्रयोग में रहा था। भारत आते-आते यह समोसा हो गया। भारत के पूर्वोत्तर हिस्सों, जैसे कि बिहार और बंगाल में इसे सिंघाड़ा कहा जाता है। ऐसा इसलिए हुआ होगा कि क्योंकि इसका आकार बहुत हद तक पानी फल सिंघाड़ा की तरह दिखता है।
समोसे का पहली बार में जिक्र 11वी सदी के इतिहासकार अबुल-फल बेहाकी के एक लेख में पढ़ने को मिलता है। जिसमें उसने मोहम्मद गजनवी के दरबार में ऐसी ही किसी नमकीन चीज का जिक्र करते मिलता है। हालांकि उस जिक्र में समोसे के अंदर आलू नहीं बल्कि कीम और मावे को भरने का प्रचलन था। कहते है पुराने जमाने में समोसा ने प्रवासियो के साथ अफगानिस्तान होते हुए भारत तक का सफर तय किया होगा। बांकी भारत को तो आप जानते ही हैं। यह कोई भी चीज आ जाए तो जबतक इसके अपने स्वाद का तड़का ना लग जाए भारतीय उसे अपनाते नहीं है, और यहाँ तो बात स्वाद की थी। भारत ने समोसे को शाकाहारी बनाने का काम किया। जी हां हसिये नहीं, ईरान और अफगानिस्तान में आज भी समोसे में कीमा,मीट या अन्य मांस को भरने का चलन है लेकिन समोसे ने भारत में ही आकर शाकाहार का स्वाद चखा था। भारत में मीट, कीमा और मांस की जगह सब्जियों ने ले ली।
हालांकि, आज कल के चलन में आपको समोसा, फिर से ना जाने किस किस स्वाद में मिल जाएगें। कहीं मेवे के समोसे तो कहीं चॉकलेट के । लेकिन असली स्वाद तो आलू के समोसे की है। आज भी भारत के अधिकतर हिस्सों में आलू भरे समोसे की सबसे ज्यादा डीमांड है। समोसे के इतने सारे भेरियेंट आने के बाद भी लोगों को आलू भरे जायकेदार तीखे सनसनी वाले समोसे ही ज्यादा पसंद आते हैं।
