जलेबी की तरह उड़द के आटे से इमरती सबसे पहले जहांगीर के शासनकाल में बनाया गया. कहा जाता है के इस मिठाई का आगाज़ जहांगीर ने मुग़ल रसोइयों से खास तौर पर निर्देश दे कर करवाया था. इसलिए इस मिठाई की खोज का श्रेय जहांगीर को जाता है. इमरती अमृत शब्द से बना है. अमृत का मतलब है मीठा पानी, क्योंकि उसमें शीरा भरा होता है इसलिए इसे इमरती कहा गया. इसको झंगिरी भी कहा जाता है.
आप जब बंगाल, राजस्थान, उत्तर प्रदेश, बिहार, और दक्षिण के भारत के शादियों में जायेंगे तो इमरती को वहां के खाने में पाएंगे. ये उत्तर प्रदेश के जौनपुर में सबसे लोकप्रिय मिठाई है. दिवाली के समय इमरती का बनना शुभ माना जाता है.
