खिचड़ी के चार यार दही, पापड़, घी, अचार – रक्षा पंड्या
कभी खट्टा तो कभी मीठा, कभी चटपटा तो कभी तीखा। अलग – अलग स्वाद और सुगंध वाले इस व्यंजन की तो बात ही निराली है। जब कभी सब्जी या तरकारी न हो खाने में तब यही व्यंजन है जो रोटी के साथ अत्यधिक खाया जाता है, जब कभी खिचड़ी बनी हो खाने में तब भी यही व्यंजन है जो स्वाद बढ़ाने के लिए खिचड़ी के साथ मिलाकर खाया जाता है। खिचड़ी और इस व्यंजन से जुड़ी तो एक कहावत भी काफी प्रसिद्ध है – खिचड़ी के चार यार दही, पापड़, घी, अचार।
यहां बात हो रही है खिचड़ी के चौथे और आखरी यार यानी अचार की! अपने खट्टे, मीठे, तीखे और चटपटे स्वाद की वजह से अचार की ख्याति विश्वविख्यात है। जिसमें भारतीय अचार के बारे में तो क्या ही कहना। भारत में मसालेदार और चटपटे व्यंजन काफी पसंद किए जाते हैं। और जहां तक अचार की बात है तो यह खाने को एक अतिरिक्त स्वाद प्रदान करता ही है। भोजन में मीठा, तीखा, नमकीन, खट्टा या जो भी स्वाद आप चाहते हैं, यदि वो नहीं है तो आपकी यह इच्छा भारतीय अचार खाकर पूरी हो जाएगी।
जितने प्रकार से यह अचार खाया जाता है, उतने ही प्रकार का यह अचार होता भी है –
नींबू का अचार
आम का अचार
आंवले का अचार
मिर्ची का अचार
मूली का अचार
गाजर का अचार
कटहल का अचार
लहसून का अचार
और भी कई प्रकार के भारतीय अचार होते हैं, जो कि विविध फल और सब्जियों से बनाए जाते हैं। अब तो दादी – नानी की रसोई से लेकर अचार भारतीय बाजार में भी काफी बड़े पैमाने पर बनाया जा रहा है। आजकल तो अचार बनाने की कई नई पद्धतियां भी विकसित की जा रही है।
इतिहासकारों के अनुसार, लगभग 3000 साल पहले अचार की खोज टिगरिस घाटी में हुई थी। यहां के लोग भारत से आए खीरे का अचार बनाकर खाते थे। 2400 ईस्वी में, मोहनजोदड़ो सभ्यता में भी अचार बनाया जाता था। यहां के मूल निवासी भोजन को बहुत दिनों तक खाने योग्य बनाए रखने हेतु उसे नमक या तेल में डूबोकर रखते थे। वो ऐसा इसलिए करते थे ताकि यात्रा के दौरान खाने की कोई कमी न हो। समय बीतने के साथ-साथ अचार लंबे दिनों तक भोजन को संरक्षित रखने और आसानी से कहीं भी ले जा सकने वाले गुणों के चलते दुनिया भर में प्रसिद्ध हो गया।
अचार शब्द की उत्पत्ति फ़ारसी भाषा से बताई जाती है। फ़ारसी में नमक या सिरके के साथ संरक्षित किए गए भोजन को अचार कहा जाता था। औपनिवेशिक काल में अचार शब्द का पहला उल्लेख एक पुस्तक में मिलता है। ‘गर्सिया दा ओर्ता’ नाम की इस किताब में एक पुर्तगाली चिकित्सक ने नमक के साथ काजुओं को संरक्षित करने की बात कही है, जिसे वो अचार कहा करते थे।
इस चटपटे व्यंजन की महिमा इसी की तरह अटपटी है। कभी आसानी से वर्णित हो जाती है, तो कभी बहुत बार वर्णन करने पर भी वर्णित नहीं हो पाती। इसलिए तब तक आप इस अनोखे व्यंजन का चटखारे ले लेकर आनंद उठाइए। क्या पता किसी चटखारे में इस व्यंजन से जुड़ी कोई और दिलचस्प कहानी मिल जाए आपको।
