क्यों हो गए मिटटी के बर्तन हमसे दूर?
यह विषय बहस का हो सकता है। मिट्टी के बर्तन हमसे दूर हो गए या हमने इनको स्वयं से दूर कर दिया। दोनों ही सूरत में नुकसान इंसान का ही हुआ है। मिट्टी के बर्तनों को मानव विकास यात्रा ने दोयम दर्जे का माना। इस सोच से हमने आधुनिक होने का जामा तो पहन लिया। लेकिन हमने यह कभी नहीं सोचा कि हमने मिट्टी को स्वयं से अलग कर दिया। उस मिट्टी को जिससे हमारा शरीर बना है। मिट्टी से अलग होने का परिणाम है कि आज शरीर बीमारियों से जूझ रहा है।
भारत के कई क्षेत्रों में बाक्साइट धातु प्रचुर मात्रा में मिलता है। बाक्साइट से आसानी से अलुमिनियम के बर्तन बन जाते हैं। लेकिन हमारे पूर्वजों ने मिट्टी के ही बर्तनो को ही चुना क्योंकि वे जानते थे कि मिट्टी के बर्तन का पका खाना स्वास्थ्य और स्वाद दोनों में अनुपम है। भारत में शास्त्र पाक कला का ऐसा विज्ञान है जिसमें क्वालिटी के साथ स्वाद का भी पूरा ध्यान रखा गया है।
एक रिसर्च के अनुसार मिट्टी के बर्तन में खाना पकाने से एक भी माइक्रो न्यूटेन्ट कम नहीं होता है। अलग बात है कि मिट्टी के बर्तनों में खाना बनाने में समय ज्यादा लगता है। खासकर दालें लेकिन यह भी समझिये जिन दालों को खेतों में पकने में समय लगता है तो रसोई घर में क्यों नहीं लगना चाहिए? रसोईघर को भारत में देवालय कहा गया है और हमने देवालय से मिट्टी के शुद्ध बर्तन बाहर फेंक दिए। और बीमारियों को दावत देते स्टील अलुमिनियम के बर्तनों को देवालयों में स्थापित कर दिया। क्योंकि मिट्टी के बर्तनों से हमारे, आपके स्टेटस सिम्बल पर प्रहार होता था। शायद आप नहीं जानते कि जगन्नाथ जी के मंदिर में आज भी प्रसाद मिट्टी के बर्तनों में ही बनता है।
जिन मिट्टी के बर्तनों को हम घरों से निकाल बैठे हैं उनको बनाने के पीछे गहरा विज्ञान और मिट्टी की जानकारी होना नितांत आवश्यक है। किसी भी तरह की मिट्टी से कोई भी बर्तन नहीं बनता हांडी बनाने के लिए जो मिट्टी उपुक्त है उसी से ही कुल्हड़ भी बनाये जायें यह जरुरी नहीं। कुम्हारों में पीढ़ी दर पीढ़ी यह विज्ञान हस्तांतरित होता चला आया। तभी तो 5500ई पूर्व सिन्धु घाटी सभ्यता से चली आ रही परम्परा आज तक जीवित है।
मेरी समझ से मिट्टी के बर्तनों को दूर कर ने का पहला कारण है समय की बचत। समय बचाने के लिए इंसानों ने सेहत से समझौता कर लिया। आदमी जीवन भर भोजन के लिए जूझता रहता है। लेकिन भोजन को पकाने में समय की बचत करता है। दूसरा कारण है अंधाधुन्द पश्चिमी सभ्यता का अनुकरण। पश्चिमी देशों की देखा देखी हम बाहरी इमारत को बाहर से चमकाने पर जोर देने लगे। यह भूल गए कि नींव कमजोर होगी तो इमारत कितनी भी सुंदर हो ज्यादा दिन नहीं टिक सकती।
तीसरा कारण है बाजारवाद, बाजार में आने वाले धातुओं के बर्तनों ने मिट्टी के बर्तनों की बाजार को ध्वस्त कर दिया! आकर्षक और टिकाऊ प्रवत्ति के कारण ये घर घर पहुँच गए। इन बर्तनों के रूप में हमने बीमारियों के लिए भी दरवाजे खोल दिए। लेकिन बीते कुछ सालों से मिट्टी के बर्तनों को प्राथमिकता मिलने लगी है। यह अच्छा संकेत है कुम्हारों के लिए और इकोनॉमी के लिए भी ! हो सकता है आने वाले वर्षों में इंडिया की घर वापसी हो और वह पुनः गौरवशाली भारत बन जाए।
