दादी नानी के समय से हमारी कहानियों का हिस्सा रहा है पान। भारत की सभ्यता-संस्कृति में रोज के खान-पान से लेकर पूजा पाठ तक में इस्तेमाल होता है पान। इस लता बेल की जड़े इतनी पुरानी है जितनी भारत के संस्कृति की जड़ें।
पान को संस्कृत के शब्द ‘पर्ण’ से लिया गया है, जिसका मतलब है पत्ती। पान का ज़िक्र भारतीय पौराणिक कथाओं के साथ-साथ आयुर्वेद की औषधियों के रूप में भी किया गया है। जालीदार शिराओं के साथ, दिल के आकार वाले पान के इस पत्ते को कई तरह के धार्मिक समारोहों में भी खास जगह दी जाती है। लगभग पांच हज़ार सालों से इसे रोज़ाना किसी न किसी रूप में इस्तेमाल किया जाता रहा है। पाइपर बीटल(Piper Betel) के नाम से जाना जाने वाला पान का सेवन सिर्फ भारत में ही नहीं, बल्कि इंडोनेशिया,मलेशिया,फिलीपींस,म्यांमार,पाकिस्तान,कंबोडिया,लाओस,थाईलैंड,वियतनाम, बांग्लादेश,नेपाल और ताइवान जैसे देशों में भी किया जाता है।
भारत की संस्कृति में पान को ताम्बूल भी कहा जाता है। तांबूल(पान) को एक ओर धूप, दीप और नैवेद्य के साथ आराध्य देव को चढ़ाया जाता है, वहीं श्रृंगार और प्रसाधन में भी इस्तेमाल किया जाता रहा है। यह विलास क्रीड़ा के साथ-साथ मुख शुद्धि का भी साधन है और औषधीय गुणों से संपन्न तो है ही। संस्कृत की एक सूक्ति में ताम्बूल(पान) के गुण वर्णन के बारे में कहा गया है कि यह वात नाशक, कृमि नाशक, कफ नाशक,मुख की दुर्गंध को दूर करने वाला और कामाग्नि को बढ़ाने वाला भी है। पान धैर्य, उत्साह, वचन पटुता और कांति का वर्धक भी है। सुश्रुत संहिता के साथ-साथ आयुर्वेद के अन्य प्राचीन ग्रंथ में भी इसके औषधीय गुणों के बारे में बताया गया है। प्राचीन काल से ही आयुर्वेदिक चिकित्सकों द्वारा विभिन्न रोगों के उपचार में पान के रस का प्रयोग होता है। जिसे कि आधुनिक वैज्ञानिकों ने भी अपने अन्वेषण में इसे सिद्ध किया है।
पुराणों, संस्कृत साहित्य के ग्रंथों, स्तोत्रों आदि में तांबूल के वर्णन भरे पड़े हैं। शाक्त तंत्रों (संगम तंत्र-काली खंड) में इसे सिद्धि प्राप्ति का सहायक ही नहीं कहा है वरन् यह भी कहा है कि जप में तांबूल-चर्वण और दीक्षा में गुरु को समर्पण किए बिना सिद्धि अप्राप्त रहती है। इसे यश, धर्म, ऐश्वर्य, श्री-वैराग्य और मुक्ति का भी साधक कहा गया है। पाँचवीं सदी के बाद वाले कई अभिलेखों में भी इसका प्रचुर उल्लेख है। हिंदी की रीति-कालीन कविता में भी ताम्बूल(पान) की बड़ी प्रशंसा मिलती है। मंगल-कार्यों में, उत्सवों में, देव-पूजन तथा विवाह जैसे शुभ कार्यों में पान के बीड़ों का प्रयोग होता है। भारत के सभी भागों में इसका प्रचार चिरकाल से चला आ रहा है। उत्तर भारत की समस्त भाषाओं में ही नहीं बल्कि दक्षिण की तमिल (वेत्तिलाई), तेलगू (तमालपाडू नागवल्ली), मलयालम (वित्तिल्ला, वेत्ता) और कनाड़ी (विलेदेले) आदि भाषाओं में इसके लिये विभिन्न नाम हैं। बर्मी, सिंहली और अरबी फारसी में भी इसके नाम मिलते हें। इससे पान की व्यापकता के बारे में पता चलता है।
भारत में पान खाने की प्रथा कब से प्रचलित हुई है इसका ठीक-ठीक वर्णन नहीं मिलता। परंतु “वात्स्यायन-कामसूत्र” और रघु-वंशम् आदि प्राचीन ग्रंथों में तांबूल(पान) शब्द का प्रयोग है। इस शब्द को अनेक भाषा-विज्ञ आर्येतर मूल का मानते है। ताम्बूल(पान) के अतिरिक्त नागवल्ली, नागवल्लीदल, ताम्बूली, पर्ण (जिससे हिंदी का पान शब्द निकला है), नागरबेल आदि इसके नाम हैं।
कहा जाता है कि समय के साथ-सात जब पान मुग़लों के हाथ लगा तो उन्होंने इसमें चूना,लौंग,इलायची डालकर माउथ फ्रेशनर के रूप में भी खाना शुरू किया। मुग़ल बादशाह बेहद अदब के साथ अपने बेहद खास मेहमानों को खुश करने के लिए भोजन के बाद इसे खिलाते थे। धीरे-धीरे मुग़लों के बीच इसकी लोकप्रियता इतनी बढ़ने लगी कि बड़ी तादाद में शाही दरबार में पान के पत्तों को भेजा जाने लगा। हालांकि पान का लुत्फ बहुत लंबे समय तक सिर्फ पुरूष ही उठाया करते थे। लेकिन वक्त के साथ इसका ट्रेंड भी बदल गया और इसे मेकअप के दौरान कॉस्मेटिक के तौर पर इस्तेमाल किया जाने लगा। कहा जाता है कि पहली बार नूरजहां ने पान का इस्तेमाल होंठों पर लाली लाने के लिए किया था, इसके बाद तमाम महिलाएं ऐसा करने लगीं ।
पान भारत में खूब खाया जाता है। खासतौर पर इसका उपयोग एक माउथ-फ्रेशनर के तौर पर ज्यादा पसंद किया जाता है। पान के पत्ते का स्वाद बढ़ाने के लिए इसमें चूना,कत्था,सुपारी,गुलकंद और न जाने क्या-क्या मिलाया जा सकता है। भारत के सांस्कृतिक विविधता की भांति ही पान में भी क्षेत्रीय विविधता देखने को मिलती है,जैसे-

पश्चिम बंगाल:- बंगला, सांची, मीठा, काली बंगला और सिमुरली बंगला
असम:- असम पट्टी, अवनी पान, बंगला और खासी पान
ओडिशा:- गोदी-बांग्लो, नोवा कटक, सांची और बिरकोली
मध्य प्रदेश:- देसी बंगाल, कलकत्ता और देस्वरी
महाराष्ट्र:- कालीपट्टी, कपूरी और बंगला (रामटेक)
कर्नाटक:- करियाले, मैसूरले और अंबाडियाले
आंध्र प्रदेश:- करापाकु, चेनोर, तेलाकु, बंगला और कल्ली पट्टी
