गुणवत्ता को ध्यान में रखकर गेहूँ को दो श्रेणियों में बाँटा गया है- ‘मृदु या रोटी गेहूँ’ एवं ‘कठोर गेहूँ’। ‘ट्रिटिकम ऐस्टिवम’ ‘मृदु गेहूँ’ होता है और ‘ट्रिटिकम डयूरम’ ‘कठोर गेहूँ’ होता है।
भारत में मुख्य रूप से ट्रिटिकम की तीन जातियों जैसे ‘ऐस्टिवम’, ‘डयूरम’ एवं ‘डाइकोकम’ की खेती की जाती है। ‘ट्रिटिकम ऐस्टिवम’ की खेती देश के सभी क्षेत्रों में की जाती है जबकि ‘डयूरम’ की खेती पंजाब एवं मध्य भारत में और ‘डाइकोकम’ की खेती कर्नाटक में की जाती है।

गेहूँ की खेती मुख्यत सिंचाई पर आधारित होती है। इसकी खेती के लिए दोमट भूमि सर्वोत्तम मानी जाती है। लेकिन साधनों की उपलब्धता के आधार पर हर तरह की भूमि में गेहूँ की खेती की जा सकती है। गेहूँ की बुवाई अधिकतर धान की फसल के बाद ही की जाती है।
इस दुनिया की बढ़ती आबादी के लिए भी गेहूँ एक मुख्य आहार के रूप में लगभग 20 प्रतिशत कैलोरी की पूर्ति करता है। चीन के बाद ‘भारत’ गेहूँ का दूसरा विशालतम उत्पादक देश है।
